CHICKEN AND MUSHROOM PIE

Ingredients
600g chicken thighs
250g mushrooms
100g smoked bacon
4 spring onions
2 garlic cloves
2 tbsp plain flour
500ml milk
1 chicken stock pot
Fresh thyme
1 tsp mustard
1 tbsp oil
1 puff pastry sheet
1 egg (beaten)
Salt & pepper
Method
Preheat oven 200°C/180°C fan. Fry chicken till browned, add bacon, cook till crisp. Stir in onions, garlic & mushrooms, cook 4–5 mins.
Add flour, then milk, stock, mustard & thyme, simmer till thick. Season.
Pour into pie dish, top with puff pastry, seal, glaze with egg.
Bake 25–30 mins till golden & crisp.
