SUMMER SALAD
Prep time: 20-30 mins
Serves 8-10
Ingredients
Salad:
400g black beans
small bag of spinach,
250g baby tomatoes
½ cucumber
1 mango
1 red onion
6 radishes
1 avocado
100g feta
Dressing:
Mint
coriander
basil
1 green chilli
1 garlic clove
100ml olive oil
2 limes (zest & juice)
2 tbsp white wine vinegar
2 tsp honey
Method
Blend all of the dressing ingredients in a food processor.
Mix together all the salad ingredients together, and serve the dressing on the side.
