CARAMEL APPLE CRUMBLE BASQUE CHEESECAKE

Ingredients
Cheesecake
730g cream cheese
175g golden caster sugar
3 tsp vanilla
3 eggs + 1 yolk
210g double cream
210g crème fraîche
30g cornflour
½ tsp salt

Compote 
8 apples peeled, chopped
50g butter
100g light brown sugar
2 tbsp lemon juice
1 tsp cinnamon
¼ tsp nutmeg
Pinch ginger
Pinch cardamom
Pinch salt
2 tbsp water

Crumble
175g plain flour
55g golden caster sugar
55g light brown sugar
110g cold butter
50g oats
½ tsp salt
1 tsp cinnamon

Caramel sauce

Method
Cheesecake: 
Preheat oven 220°C/200°C fan, line 20cm springform tin.
Mix cream cheese, vanilla, sugars, eggs, cream & crème fraîche.
Add cornflour & salt, mix smooth. Pour into tin, tap to remove bubbles.
Bake 30 mins till centre wobbles. Cool, chill 4–6 hrs or overnight. 

Crumble: 
Preheat oven 160°C/140°C fan, line tray.
Mix dry ingredients, rub in butter, add oats.
Bake 15–20 mins till golden, turning halfway. Cool completely. ✨

Apple compote: 
Melt butter in a pan, add chopped apples & brown sugar, stir to coat.
Add lemon juice, spices & a splash of water.
Cook 12–15 mins till soft but slightly firm. 🍎
