A little spring Pear and Caramel Pavlova, light, sweet and simple to bring together. It felt like the right thing to make on a slow afternoon in the kitchen.

PEAR AND CARAMEL PAVLOVA 
Prep time: 15-20 mins
Cook time: 2 hours, plus leaving overnight
Serves 8-10

Ingredients
6 egg whites
300g caster sugar
2 tsp cornflour
1½ tsp white wine vinegar
Filling
300ml double cream
1 tbsp icing sugar
1 tsp vanilla extract

Decorate

Poached or tinned pears
20g toasted hazelnuts
Caramel sauce
Melted chocolate sauce

Method
Preheat oven 130°C/110°C fan.
Whisk egg whites to soft peaks, slowly add sugar till thick & glossy.
Spread onto an 8" circle on baking paper.
Bake 1½ hrs, then turn oven off & leave inside 2+ hrs to cool.
